Sort of Obsessed
I’m sort of obsessed with the lunch I ate today. Yesterday, I bought a small spaghetti squash at the farmers’ market, so I cooked-it-up for lunch today. (Check out my post about how to cook spaghetti squash .) After baking the squash and pulling out the strands with a fork, I added marinated artichokes and store-bought pesto sauce. The flavors and oils from the artichokes and pesto were just the right amount to meld everything together into a yummy dish. I’m so happy that I have leftove
